Shutter & Brew combines the art of photography with the art of a good coffee

We have all said it once in our life: "Mum, this cooking is so good, you should open a restaurant!"

For Brisbane mum-of-two Alyssa Olzard, this proclamation became her business when she opened up Shutter & Brew in November of 2014 with her mother-in-law Sandy Williams.

With her husband away a lot with work, Alyssa decided she needed her own 'hobby' to keep her busy. But rather than picking up the gardening tools or knitting needles, Alyssa went head-first into opening a trendy coffee shop-cum-gallery that combined visual art, great brew, and some hearty home cooking courtesy of her mother-in-law.

Both Alyssa and Sandy came with a degree of preparedness for their new roles as cafe owners: Alyssa managed hotel restaurants, whilst Sandy worked as a chef for the Royal Women's Hospital...and as the chef for a bustling family of seven children. As Alyssa says, "I do the coffee, and Sandy does the food!"

The duo purchased the business from a previous owner, inheriting the Silver Chef-purchased equipment, too. Alyssa had worked extensively with traditional lenders, and other hospitality equipment companies in her previous roles, and was pleasantly surprised when she was introduced to the Silver Chef system.

"I am so happy with Silver Chef, they got back to me straight away," says Alyssa. "I don't have to wait on the phone, they are so helpful, and when we had a warranty issue with our freezer, Silver Chef got back to me same day."

Indeed, when Alyssa and Sandy couldn't handle the logic-defying setup of the old chest freezer at the cafe, it was straight on the line to Silver Chef to purchase a new, larger Bromic single solid door upright freezer. Now, they are not only able to buy produce in bulk, they can pre-prepare meals and store in advance. This definitely sounds like the logic of a mother of seven, doesn't it?!

Alyssa and Sandy have also taken over the Silver Chef equipment the previous owners rented, renewing the contract for another 12 months with a significant discount.

The existing equipment includes everything you would need to run a busy cafe, including:

  • 2 x Mazzer coffee grinders
  • La Marzocco 2 group espresso machine
  • Bromic single door undercounter fridge
  • Skope 2 door upright display fridge
  • Comenda undercounter dishwasher
  • Roband milkshake machine
  • Brema ice machine

Shutter & Brew have gathered a steady following in their local Wavell Heights area, with the funky layout of the cafe boasting a beautiful photography wall, in which Alyssa showcases local artists. A keen photographer herself, Alyssa also arranges photography classes for those interested from the cafe with a professional photographer.

Young, vibrant, and always bursting with delicious home-cooking (apple crumble slice, we're looking at you…) Alyssa has created a business that nails the modern cafe culture.

With their lease up in 2017, Alyssa and Sandy are already discussing potential plans for expansion. Will Silver Chef be the first person they call when ready?

"Of course!" laughs Alyssa. "Who else!"
